What is the difference between EQ and compression?

EQ differs from compression in that EQ controls how much of each frequency is in a song. Compression, however, controls the overall volume. EQ changes apply to the whole song (i.e. they are static), whereas compression changes the volume on the fly as the song is playing (i.e. dynamically).

Should you put compression on every track?

You should not compress every track in your song automatically. Compression should be applied to tracks that have a large difference in volume between the loudest and quietest parts. It can also be used to add energy to a track. It is perfectly acceptable to have a track with no compression on it.
